So I saw some pretty fabulous photos of giant pancake cakes made in a rice cooker and I had to try it out for myself.

Everything is essentially the same when preparing the pancake batter with the exception that you won’t have to watch over a pan and flip over a bunch of pancakes. Now you can simply add some cooking spray to the rice cooker pan and hit the start button.  I LOVE THAT!

I kept it simple and used what I had on hand decorating the top with sliced bananas and covering with syrup. You can also have fun by mixing in other ingredients, like chocolate chips, sliced berries, or cocoa powder.

To test that your pancake is done, stick a toothpick in it and if it comes out clean – it’s done. I did have to press the rice cooker button a few times before the pancake was fully done. Aside from that, the pancake was fluffy and yummy.

I will be making more of these easy pancakes for my family. Who knew that rice cookers could be so versatile!
