I have things on my to do list and I even have more to do for my New Year resolutions. But my most important resolution is to spend more time with my kids and hubby. I work all day and by the time I get home and cook dinner, sometimes my kiddos have fallen asleep already. So in an attempt to spend more free time with them I bought myself a crockpot so that I can have dinner ready by the time I get home. Cooking with the crockpot will give me more time to play and read to my kids, which is one of my favorite things to do. Here is one of my latest crockpot creations.
Crockpot Pork Chops
Ingredients
- 6-8 pork chops
- 5 small bell peppers
- 15-20 baby carrots
- 2 green onions
- 1 apple
- Barbeque sauce
- Orange marmalade
- Apricot marmalade
- Chicken stock
- Chili flakes
- Sriracha sauce
- Chop the veggies and apples seasoned them and place them at the bottom layer of crockpot Season pork chops with salt, garlic and pepper and placed them on top of veggies bed.
- Create the glaze for the pork cops by mixing equal parts of the two marmalades and BBQ sauce with some chili flakes and sriracha sauce. Spread over the pork chops.
- Add 3/4 of a cup of chicken stock
- Slow cook in crockpot for entire day.
