Baked Eggs in Avocado

Looking for a healthy, simple breakfast dish to make? Try making baked eggs in avocado. This low-carb dish is so easy to make and it will surely impress your family.

Ingredients:

  • 2 ripe avocados
  • 4 eggs

Directions:

  1. Preheat oven to 425 degrees
  2. Slice avocados in half and remove the pits. On both sides of avocado, scoop out a large hole that will accommodate an egg.
  3. Place the avocadoes snuggly in a baking dish.
  4. Crack an egg into each avocado slice. This can be messy so be sure that the hole is big enough to prevent the egg from spilling out.
  5. Place dish in oven and bake for 20 minutes providing enough time for the egg whites to set.
  6. Season with pepper and garnish with fresh salsa.

This dish is perfect to eat alone or serve with a side of beans and turkey bacon which I did!
